White Bean, Onion and Goat Cheese Crostinis

Ingredients:
2-3 Chinese sweet pork sausages, cut into thin strips or small cubes
2 cups cooked white long grain or jasmine rice
1 teaspoon vegetable oil
1 teaspoon sesame seed oil
2 teaspoons soy sauce
2 eggs
2-3 tablespoons water
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
2-3 leaves sweet basil, minced

In a large non-stick pan, cook the sausage until it begins to crisp. Remove from pan and set aside. In the same pan, heat the vegetable oil, sesame seed oil, soy sauce and water until it begins to simmer. Add rice pressing it down into the pan with a spoon or spatula. When the rice begins to simmer or 'fry,' add the salt, pepper, garlic powder, and the cooked sausage and mix together. Once fully incorporated, cook the eggs by pushing the rice to one side, creating space in the pan for the eggs. Scramble the eggs until firm but still slightly wet. Combine with the rice and sausage mixture. Garnish with minced basil leaves and serve.
