Simple Potato Chips

4 large potatoes, peeled
3 tablespoons butter
1/4 cup olive oil
Salt and pepper to taste

Slice the potatoes with a mandolin into thin discs. Layer the pieces of potato into a small skillet with melted butter, adding salt, olive oil, and pepper with each layer. Press down all layers with a heavy pan, or bacon press. Cook over low heat for 10 minutes. Flip over onto a large plate and replace into skillet. Press down again with heavy pan, or bacon press, cooking an additional 10 minutes until both sides are a golden brown.
