Semi-Traditional Maine Lobster Roll
Meat from half a lobster, cut into cubes (approximately 6 ounces) 2 tablespoons minced celery
2 tablespoons mayonnaise
1 clove garlic, finely minced
½ lemon, zested
Salt and pepper to taste
Melted butter for the bun
Boston bibb lettuce leaf
In a small bowl combine the lobster meat, mayonnaise, celery, garlic, and lemon zest. Carefully fold these ingredients together and season with a pinch of salt and pepper. Line a buttered hotdog bun with a leaf of Boston Bibb lettuce and top off the hotdog bun with the lobster meat mixture.
Bring a large pot of water to a boil. Drop fresh lobster into the boiling water for 7-10 minutes. Remove lobster and either set aside to cool and drain, or cool in an ice bath. Be sure the lobster has cooled and drained before removing the meat from the shell. Hint: break open lobsters over a pot to save juices and save the shells for boiling to create broth.
