1 package sweet Italian sausages, about 4-5 sausages
1 teaspoon black pepper
2 tablespoons cilantro, minced
2-4 tablespoons feta cheese
Preheat oven to 350°F.
Lightly grease a sheet pan. In a mixing bowl, combine the zest of one orange, the juice of one orange, the feta cheese, minced cilantro, and black pepper. Cut the remaining oranges into 1/8 inch slices and layer them on the sheet pan. Cut a slit length wise in each sausage creating a “pocket”. Use a teaspoon to “stuff” the sausage with the feta and orange mixture. Place sausages on top of the oranges slices with the pocket facing up. Bake in the oven for approximately 30 minutes, or until the sausages have cooked through and all the pink is gone.
