Roasted Tomatillo Spicy Salsa Verde Salad

5-6 fresh tomatillos, outer husk removed
1 jalapeño, thinly sliced (optional)
½ red onion, thinly sliced
1-2 teaspoons olive oil
1 teaspoon salt
½ teaspoon pepper
Juice of 1 lime
2 teaspoons fresh cilantro




Set oven to broil. Cut tomatillos into thin wedges. On a sheet pan, combine tomatillos, jalapeno, and onions. Drizzle with oil and season with salt, pepper and lime juice. Stir ingredients together and spread out over the sheet pan. Broil for 2-4 minutes or until some of the tomatillos or onions begins to char. When cooked, and juices are released, scoop contents into a bowl to serve as a warm side salad. Mince finely and it becomes a flavorful dip for nachos.
