Orange & Mango Cream Pound Cake Parfait (Serves 2)
1 fresh mango
2 tablespoons sugar
2 lemons juiced
1 cup of evaporated milk
Store-bought pound cake
Sprig of fresh mint for garnish
Peel and dice mango and place in a bowl. Peel and section oranges in a separate bowl. Add 1 tablespoon of sugar, the juice of one lemon and ½ cup of evaporated milk into each of the bowls of fruit. Mix each bowl to combine and set aside. Slice the pound cake into ½" slices. Use the rim of a decorative glass to cut rounds from the pound cake. Layer the ingredients in the glass or on a serving dish, beginning with a slice of pound cake, followed by a layer of mango, whipped cream, pound cake, orange, whipped cream, pound cake, and any remaining fruit. Finish with a layer of whipped cream and top with a sprig of fresh mint.
