Grilled Lamb Loin Chops

1 3-5 pound lamb loin
5 garlic gloves, minced
4 tablespoons olive oil
Salt and pepper to taste
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 tablespoon fresh parsley, finely chopped

Preheat oven to 350°F.
Trim excess fat from loin. Cut 5-7 slits in loin and rub generously with olive oil, garlic and herbs, making sure to get excess into slits in loin. Grill for 10-12 minutes to achieve crust and grill marks and transfer to 350°F oven for 10 additional minutes. Allow to rest for 10 minutes then slice and serve
