Grilled Buffalo Chicken Nachos with Triple Cheese Sauce (Serves 1-2)
1 cooked chicken breast from Grilled Chicken Francese recipe
1 bag store-bought nacho chips
1 cup heavy whipping cream
½ cup of shredded cheddar cheese
½ cup of grated parmesan cheese
2 tablespoons blue cheese
1 tablespoon of ketchup
1 tablespoon hot sauce
2 jalapeños, sliced
2-3 tablespoons cilantro, roughly chopped
Preheat oven to 300°F.
Put nacho chips in an oven safe serving bowl. Heat the chips in the oven for 20 minutes. Meanwhile, pour the heavy whipping cream in a saucepan and heat over low heat. As soon as the cream begins to boil, remove from the heat. Add the cheeses and stir, allowing the heat to melt the cheese. When the cheese is melted, add the ketchup and hot sauce, stirring together well. Add the sliced jalapeno peppers into the cheese. Stir together. To prepare the nachos, top the heated chips with sliced or chopped chicken. Pour ½ of the cheese sauce over the nachos, reserving the other half in a bowl for extra dipping. Add the cilantro for garnish and extra flavor.
