Fresh Cucumber and Tomato Salad (Serve as side dish for 3-4)
1 cup cherry tomatoes
1 tablespoon olive oil
2 teaspoon apple cider vinegar
1 tablespoon dried Italian seasoning
1 teaspoon salt
½ teaspoon pepper
Peel the cucumbers, keeping a little bit of the green, and slice on a bias. Halve the cherry tomatoes. Combine vegetables in a bowl. In a separate bowl, whisk together oil, vinegar, Italian seasoning, salt and pepper. Pour vinaigrette over vegetables. Keep salad chilled in refrigerator until ready to serve.
