Fish tacos (Serves 3-4 tacos)

3-4 fillets mahi-mahi or any firm white flaky fish
1 teaspoon olive oil
2 tablespoons parsley, minced
1 lemon, juiced
1 garlic clove, minced
Salt and pepper to taste



Pat filets dry with paper towel. Heat olive oil. Add garlic and rosemary to the pan. Add the fish. Season with salt and pepper. Cook until fish begins to turn golden brown. Add juice of lemon. Cook until fish is done, about 6-8 minutes.
