Croatian Duck with Orange and Thyme

*These are not "exact" recipes, but "inspired" by these episodes


1 duck, whole, cleaned, washed and dried 

1 Tbs, salt

2 tsp, black pepper

2 oranges, cut in half

1 bunch of thyme


Preheat oven to 400 degrees.  After cleaning the duck, "score" the skin of the duck crossways.  Season outside and inside of the duck with salt and pepper.  Insert into the cavity the oranges and thyme.  Wrap with foil and place in the oven for 1 hour.  After that, remove the foil and continue to cook for another 1.5 hours. Allow meat to rest before removing the thyme and oranges.
