Coconut Cream and Herbal Mashed Potatoes

1 lb. potatoes, peeled and cubed
¼ cup coconut milk
¼ cup coconut cream
1 tablespoon fresh parsley, minced
1 tablespoon fresh basil, mined
1 clove garlic, finely minced
2 tablespoons salt
Salt and pepper to taste




Add potatoes and salt to a pot and add cold water to cover by about 2 inches. Bring to a boil. Cook potatoes until fork tender. Drain the water, reserving ¼ cup of the water. Mash the potatoes with a potato masher. Add the rseved water, coconut milk, coconut cream, parsley, basil, and garlic. Whisk all together so that potatoes are almost a puree consistency. Cook over medium high heat until desired consistency, and add salt and pepper to taste.
