Classic French Fries

8 Idaho potatoes
1/2 gallon peanut oil
Salt and pepper to taste

Heat oil to 300°F. Cut potatoes with a fry cutter or with a knife. Keep fries in cold water until cooking to prevent the potatoes from darkening. When oil is heated, add fries, carefully shaking off excess water before adding to the oil. Cook in batches to prevent overcrowding for 3-4 minutes. Remove and place on a cookie rack and rest until cool to touch. Heat oil to 350°F. Return fries and cook until golden brown. Drain excess grease. Season immediately with salt.
