Cinnamon Spiced French Toast

6 slices white bread
4 eggs
1 teaspoon cinnamon powder
1 teaspoon vanilla extract
2 tablespoons brown sugar
2-4 tablespoons butter


In a large, flat-bottomed bowl combine eggs, cinnamon powder, vanilla extract and brown sugar. Whisk together until the mixture reaches a smooth consistency. Heat non stick pan and melt butter, 1 tablespoon at a time, making sure the butter has melted to lightly cover the entire cooking surface. Reduce heat to medium. Place one slice of bread into the egg batter mixture and lightly soak both sides of the bread. Immediately transfer to the pan. Cook about 2-4 minutes on each side, using a spatula to flip the French toast. Cook until golden brown on both sides of the bread. For best results, use bread that has been left exposed overnight so that it is slightly drier than fresh bread.
