Salmon En Papillote

4 18x15 Parchment Paper

1 Side of Salmon, skin removed (4 x 6oz pieces)

2 cup Sliced Sweet Onions

2 cup Shredded Carrots

1 Garlic Clove (minced)

16 Asparagus (trimmed to 5 inches)

to taste Salt and Pepper

½ cup Grapeseed oil

4 Lemons

2 Tbs Butter



  1. Preheat oven to 450 degrees
  2. Mix together Onions and Carrots and garlic in a bowl with olive oil, season with Salt and Pepper and divide evenly between the 4 pieces of parchment paper.
  3. Season Asparagus with oil Salt and pepper and lay on top of carrots and onions to form a bed.
  4. Place Salmon on top of the bed of vegetables, place ½ TBS butter on Salmon, Season with Salt and Pepper and top with 1/2in thick lemon slice.
  5. Fold the other half of parchment over the fish and starting from one end begin crimping and folding the paper right before you seal add in a little extra liquid to keep the fish moist and then seal tightly.
  6. Place on a sheet pan and bake for 8 to 10 minutes
  7. Remove from oven top with green onions and serve
