Carbonara with Spam

1 can Spam, cubed
1 box rigatoni
3 eggs + 3 egg yolks
1-2 teaspoons white wine
1 tablespoon butter at room temperature
1/2 cup parmesan cheese
1 teaspoons salt
2-3 teaspoons black pepper

Cook pasta according to label directions. In a large sauté pan, cook the cubed Spam over medium heat and render it down until it becomes slightly crispy. Remove from the heat. In a bowl, combine eggs, egg yolks, wine, 1/8 cup of parmesan cheese, salt and pepper and mix together thoroughly. This will become the sauce for the Carbonara and will be cooked by the heat of the pasta. When pasta is cooked, drain completely and immediately add it to the egg mixture. Add the sautéed Spam and 1-2 teaspoons of the oil from the pan. Add butter and rest of the cheese and mix together. Serve immediately in warm bowls.
