Balsamic Baked Bleu Cheese, Brown Sugar Apple (Serves 2 people)

Ingredients:
1 Granny Smith apple
2 tablespoons brown sugar
1 tablespoon blue cheese
1 tablespoon butter
2-4 tablespoons granola mix with nuts
2 tablespoons balsamic vinegar
2-4 cups water
Whipped cream or ice cream for topping
Fresh mint leaves for garnish

 

Preheat oven to 350°F. 

Wash apples.  Cut them in half and use a melon-baller to remove the seeds, creating a small cavity in the apple.  Slice a thin piece from the bottom each apple half to create a base.  Place them in a baking dish, flesh side up.  Top each apple with brown sugar, blue cheese, a cube of butter, and granola mixture.  Pour balsamic vinegar over the mixture.  Add water to the bottom of the baking dish.  Bake for 25-30 minutes, or until apples are soft and tender.  Serve apples in a semi deep dish with ice cream or whipped cream and a sprig of mint for garnish.
