Episode 1: An International Ragu

*These are not "exact" recipes, but "inspired" by these episodes

This recipe, inspired by so many different ingredients from all over the world, is one that you should be able to create with local ingredients.  

Ingredients:

1/2 lb of chicken, minced

1/2 lb of ground beef

1/2 lb of italian sausage

1 large onion, minced

2 cups of mushrooms, sliced

2 cloves of garlic, minced

1 cup of white wine

30 ounces (apx) tomato sauce

1/4 cup of parmesan cheese, grated

4 Tbs, Olive oil

Optional:  

1 lb of spaghetti, precooked and reserved with 1 cup of starchy water

Directions:

Heat olive oil in a large pan.  Add the onions and garlic and cook until onions are translucent.  Add the chicken and cook, apx 3-5 minutes, stirring occasionally.  Add the pork and ground beef and cook for 2-3 minutes.  Add the white wine, salt and pepper, stir and allow to simmer over medium heat for 1-2 minutes.  Add tomato sauce and mushrooms and cook until it begins to boil all together.  

Either add the cooked spaghetti and mix, along with 1 -2 Tbsp of starchy pasta water at a time to help with the desired consistency.  OR, you can use this sauce to top off other menu items, such as bread or fritters.   Top off with parmesan cheese.
