CATTERN PIE FOR ST. CATHERINE'S DAY (12/25)

 
This is an open pie in the shape of a wheel – St Catherine was an early Roman martyr said to have been martyred by being tied to a wheel…. 

Shortcrust pastry (see recipe for mince pies)

Stewed apple: about eight apples, peeled and sliced, stewed with water and sugar to taste (not too sweet)
One jar of mincemeat 

Preheat oven to 350° F/180°C/Gas Mark 4
Line a round dish with the pastry: save all the bits left over, roll them out and cut them into strips about half an inch wide. Fill the dish with a layer of mincemeat, and then a layer of stewed apple. Make spokes from your strips of pastry and lay them across to form a wheel. Bake until the pastry is cooked (about 15-20 minutes).  Serve with cream.


After supper: a St. Catherine’s Day tradition is for girls to jump over a lighted candle while wishing for a nice sweetheart!
