Madeleines

4 ounces butter
4 ounces sugar
1 egg
½ tablespoon vanilla essence
8 ounces white flour
Some milk as required (see below)
Coconut, desiccated or shredded
Strawberry jam
Icing or powdered sugar
Mini-cupcake or muffin papers

Cream the butter and sugar together. Add the egg and beat until the mixture is smooth, and then add the flour (sifted). If the mixture is too stiff, you may like to add a little milk.

Put the mixture by spoonfuls into paper cupcake cases, or, if you have one, into a set of greased madeleine or cupcake pans.   Bake 10 minutes at 350 degrees or gas mark 5-6.

When you take them out of the oven, let them cool. Then put some strawberry jam into a wide shallow dish and roll each madeleine in it, and then in shredded coconut. Arrange the madeleines an attractive plate, and enjoy!  Sometimes people top each with a glace cherry.
