Breakfast Casserole

Ingredients:
4 tablespoons butter
7-8 eggs
1/2 cup diced bell pepper, sautéed
1 cup diced onion, sautéed
1 cup favorite cheese
½ pound bacon or sausage
1 pound mushrooms, sautéed
1 can artichoke hearts
2 cups spinach
1 whole mushroom, sliced

 

 

Preheat oven to 350ºF.

Whisk eggs and incorporate all remaining ingredients. Pour into a buttered casserole or other glass/ceramic dish. Bake until eggs are cooked through, about 20-25 minutes. Serve as brunch or breakfast dish.
