Skewered Mediterranean Shrimp (Serves 2)
 
 
 
 
 

Ingredients:
12 large shrimp, peeled and deveined with tails on
1 clove fresh garlic, minced
1 tablespoon rosemary, finely minced
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon pepper
Juice from 1 lemon
2 six inch skewers

 

Directions:

 

Prepare shrimp by removing shells and deveining, but keeping the tails intact. Prepare two skewers, each with 6 pieces of shrimp, tightly packed together on the skewer. In a bowl, combine garlic, lemon juice, rosemary, olive oil, salt and pepper. Whisk together. Pour over the shrimp and marinate for 15 -20 minutes. Apply non-stick spray to a skillet over medium heat. Cook shrimp skewers for 2-3 minutes on each side, or until the tails turn a bright orange pink color.

   
Skewered Beef Tenderloin with Balsamic and Ketchup Glaze (Serves 2)
 
 
 
 
 

Ingredients:
1 pound beef tenderloin
1 tablespoon ketchup
1 tablespoon balsamic vinegar
2 teaspoons olive oil
1 teaspoon salt
½ teaspoon red pepper flakes
½ teaspoon pepper
Juice of ½ a lemon
2 six inch skewers

 

Directions:

 

Trim fat from beef tenderloin and cut into cubes. Set aside. In a bowl, whisk together all of the other ingredients. Add beef and stir to coat. Marinate for 1 hour. Skewer the meat, divided among two separate skewers, packing the cubed beef tightly. Heat grill pan, and apply non-stick spray. Cook beef for 2 minutes on each sided, total 8-10 minutes. Remove and rest 5 minutes before serving.

   
Creamy Couscous (Serves 2)
 
 
 
 
 

Ingredients:
1 cup couscous
½ cup water
¼ cup white wine
¼ cup whipping cream
1 teaspoon butter
1 teaspoon salt
½ teaspoon black pepper

 

Directions:

 

Combine water and white wine in a saucepan and bring to a light boil. Add couscous and continue stirring 2-3 minutes. Add cream, butter, salt and pepper and cook 2-3 more minutes. Remove from heat and use a fork to break apart the couscous before serving.

   
Butter Steamed Broccoli (Serves 2-3)
 
 
 
 
 

Ingredients:
2 cups broccoli florets
1 tablespoon olive oil
½ cup water
1 teaspoon salt
½ teaspoon pepper
½ teaspoon red pepper flakes
1 teaspoon butter

 

Directions:

 

Add water and olive oil to a frying pan, and heat over medium heat until it begins to boil. Add salt, pepper, pepper flakes and butter to the pan. Add broccoli florets. Stir occasionally so the broccoli cooks evenly. Continue cooking until most of the water is evaporated or until the broccoli turns bright green. Remove from heat and serve immediately, pouring the rest of the liquid as a sauce over the broccoli.
