
Salmon Fillet with Creamy Lemon and Dill Dressing
John 21: 9 & 12
9 When they got out on land, they saw a charcoal fire there, with fish lying on it, and bread.
12 Jesus said to them, “Come and have breakfast”
Ingredients:
2 Salmon filets, skinned
Salt & pepper
Lemon
1 clove garlic, casing removed and minced
¼ Cup Mayonnaise
3 sprigs of Dill, 2 whole and 1 minced
Olive oil
Also a starch of either prepared 90 second rice or pasta
1/3 to ½ cup of white wine
Recipe:
Combine juice of ½ lemon, ¼ cup mayonnaise, some minced dill, salt and pepper in a bowl. Set aside.
Season salmon filets with salt, pepper and lemon zest.
Heat olive oil and garlic together in a pan.
Place dill sprigs in pan and lay a salmon filet over each sprig.
Cook for 2 minutes, then turn and add a dollop of mayonnaise mixture on fish and reduce heat.
Add white wine and cook another 2 minutes.
Add pre-cooked rice or pasta to pan.
Add olive oil, salt and pepper and heat .
Serve fish on a bed of heated rice
