Penne Carbonara




Penne pasta
1 lb Thick cut bacon
2 eggs + 2 egg yolks
2-4 tablespoons Parmesan cheese
Salt & pepper
2 teaspoons of white wine




Place penne pasta in boiling water.


Cube bacon and cook in pan.

Combine beaten eggs and yolks with wine until smooth.


Once pasta and bacon are cooked, strain pasta well, add to egg mixture, and add hot sizzling bacon.


Sprinkle with parmesan cheese, and add some bacon fat if necessary to cook egg mixture.

Season with salt and pepper and more cheese according to taste.
